(makes 4-6 servings)
1 cup rice
5-6 cups water
3 quarter sized slices of minced ginger
1/2 tsp cinnamon
1/2 cup dried dates (chopped)
1/2 cup walnuts (chopped)
maple syrup, honey, brown rice syrup or agave nectar to taste
Add all ingredients EXCEPT SWEETENER to crock pot and cook 4-6 hours on warm until grain is tender. It is better to use more water and cook for longer. You can also cook congee on stovetop on low flame for 4-6 hours. Add sweetener to taste and serve.
