Super Summer Smoothies

I find that as summer wears on, it’s more and more tempting to skip meals and eat quick snacks (read things that come in packages) so I don’t have to turn on the oven. And if you’ve got kids, your carefully crafted school year schedule is usually been thrown out the window, making it even harder to plan to eat healthy throughout the day. My go to summer answer? Super Summer Smoothies! You can make a delicious breakfast, lunch or snack at home in the blender in about 3 minutes! Bonus, the kids think they are getting a special treat, and they are – it just happens to be healthy!

Berry Yummy

½ cup coconut water
½ cup pomegranate juice
2 tbsp Almond butter
a handful each of:
frozen strawberries
frozen raspberries
banana (fresh or frozen)
fresh spinach (or half a cup frozen)

Blend until smooth, if it’s too thick add liquid until you achieve the desired consistency

Peachy Greens
1 cup apple juice (or half apple half coconut water)
4 large leaves of kale de-stemmed
½ cup spinach
½ cup peaches
½ cup mango

The pale yellow fruit and bright green veggies make this smoothie neon green, surprise the play group with alien juice!

Blend until smooth, if it’s too thick add liquid until you achieve the desired consistency

Mixed Berry Cobbler
½ cup each of frozen blueberries, blackberries, strawberries, and raspberries
1 cup vanilla yogurt
optional pinches of cinnamon and nutmeg

blend until smooth, if it’s too thick add a little soy or skim milk to taste
