Creative lunch ideas for the whole family

Yay! The kids are back in school! No more scrambling for play dates, last minute childcare or the dreaded cries of “Mo-om! I’m Bo-ored!” Instead it’s time for getting up way too early in the morning, scrambling to find socks and important papers, and making sure everyone has enough healthy food to get them through a nice 7.5 hour day.  Wait, whose idea was this school thing again?

Don’t fret! There’s hope!  We can help!  Well at least with the Healthy food part. Here are some of our favorite creative and easy lunches, sure to please the whole family! Bonus – all are easy to make on a budget! So get started on thinking outside the lunch box.

Confetti Couscous
Serves 2-4

3 Cups prepared couscous* – plain
1 carrot – shredded
½ – 1 cup fresh spinach – finely chopped
1 roma tomato – diced
2 tsp. olive oil
2oz soft goat cheese (optional)
Salt and pepper to taste
Gently toss all ingredients and enjoy!

*Boxed couscous with the pre-made spice pack included is delicious, but can be high in sodium. For an even healthier option, buy in bulk, and add your favorite herbs (it’s cheaper too!)

Super Tuna Salad
Serves 2-3

10oz high quality Tuna fish – drained
2 hard boiled eggs – chopped
12oz artichoke hearts, rinsed in fine mesh colander and excess water pressed out– chopped
1 tbsp. canola oil mayonnaise
Fresh lemon juice to taste
Salt and pepper to taste
Stir all ingredients until well combined; serve with whole grain crackers and/or your favorite salad greens
Hum-ocado Sushi
Serves 1

2 tbsp.  + ½ tsp. of your favorite hummus
½ a ripe avocado – thinly sliced
2 tbsp. sharp cheddar cheese
Handful mixed salad greens
1 tbsp. matchstick carrots
1 whole grain tortilla
Warm tortilla until pliable, spread 2 tbsp. hummus over surface leaving a ½ inch boarder around the edge.  Layer avocado, cheese, greens, and carrots on top. Roll everything up tightly like sushi. Leave an inch or so of tortilla free, then spread with the extra ½ tsp. of hummus. Continue rolling until sealed. Secure with a toothpick and refrigerate for at least 30 minutes or over night.  With a sharp knife slice the wrap into 1-inch pieces.
