I love grilling peaches because not only does it bring out their natural sweetness and juicy flavor, but they’re also the perfect vehicle for some incredible toppings. Before throwing your peaches right on the grill, you’ll want to first halve them and remove the pit. To do so:
Run a sharp knife all the way around the peach, following the natural line that starts at the top.
Carefully twist the peach halves to loosen them, then pull them apart.
Use a spoon to gently remove the pit from one half of your peach.
Make sure you’re using peaches that are that the correct level of ripeness, they should have some give when squeezing but that they do not bruise to the touch — those peaches would be too ripe and make a mess on the grill!

4 ripe peaches, halved and pitted
Olive oil, for brushing the peaches

1-2 tablespoons melted salted butter
1-2 tablespoons brown sugar
½ teaspoon cinnamon
Salted Brown Butter & Ice Cream
Vanilla ice cream
1-2 tablespoons butter, browned
Lemon Ricotta Pistachio**
Ricotta
Lemon zest
Salt, to taste
Chopped roasted pistachios
Drizzle of honey
Basil or arugula
Yogurt + Granola (breakfast version!)

INSTRUCTIONS
Preheat your grill to medium high heat or about 400 degrees F.
Brush peach halves with olive oil to prevent them from sticking to the grill. Place peach halves flesh-side down on the grill and cook for 3-4 minutes or until grill marks form. No need to flip! Only grill one side until the peaches are slightly juicy.
Remove peach halves from the grill and serve with your desired toppings.
NOTES
This serves 4, but feel free to double the recipe or cut in half for a smaller serving. Enjoy!
*For the Cinnamon Brown Sugar topping: mix the butter, brown sugar and cinnamon together and spread over peaches before grilling.
** For the Lemon Ricotta Pistachio topping: mix lemon, ricotta and salt together, then place on grilled peaches and top with pistachios, a drizzle of honey, and basil OR a few arugula pieces.
