One-Pot Okra Stew

INGREDIENTS

  • 1 3/4 lbs okra (frozen okra, thawed preferred)

  • 1 teaspoon olive oil (moistens and supports digestion)

  • 1 medium onion, chopped (supports digestion and clears toxins)

  • 5-7 garlic cloves, minced (boosts immunity and clears heat)

  • 1 lb tomatoes, chopped (cooling, nourishes Yin, and clears heat)

  • 6 tablespoons tomato paste (adds depth, cooling, and supports digestion)

  • 1 teaspoon coriander powder (warming, promotes Qi flow)

  • 1 teaspoon pomegranate molasses (clears heat and tonifies Yin)

  • 1 cup vegetable broth or water (hydrating and nourishing)

  • 1 tablespoon lemon juice (clears heat and supports Liver health)

  • 1/2 teaspoon 7 spice (to taste)

  • Salt and pepper to taste

  • Optional: Fresh parsley for garnish (cooling and supports digestion)

INSTRUCTIONS

  1. Prep the Okra: Trim stems of fresh okra or rinse thawed frozen okra.

  2. Cook Aromatics: Heat olive oil in a pot. Sauté onion and garlic until fragrant.

  3. Add Spices & Okra: Stir in spices, okra, and tomatoes, mixing well.

  4. Simmer: Add tomato paste, broth, pomegranate molasses, salt, and pepper. Cover and simmer for 20-25 minutes, stirring occasionally.

  5. Finish: When the vegetables are softened, stir in lemon juice, adjust seasoning, and garnish with parsley if desired. Enjoy!
