Strawberry Watermelon Caprese Salad
Strawberry Watermelon Caprese Salad is a nourishing, flavorful, summertime salad with fresh from the garden strawberries, watermelon, and basil. This fruit salad will be on repeat all summer long at our house! It’s the perfect light side dish to go with grilling and couldn’t be easier to make.
Both Strawberries and Watermelon are high in nutrients and have great TCM nutritional properties!
Strawberries are known in Chinese medicine to eliminate Wind, lubricate the Lungs, and promote Body Fluids: stop coughing, dry cough, sore throat, difficult urination, quench thirst. Strawberries also help to tonify the Spleen and soothe skin: sunburn, wheals, age spots.
Watermelon (Xi Gua) is used in herbal remedies for its ability to clear Summer-Heat, promote urination and decrease thirst. Watermelon is the perfect solution to those long days spent out in the sun! To increase the diuretic effect, eat the white rind of the fruit (found just against the green, hard exterior rind). Xi Gua is often used to alleviate symptoms for some cases of edema and jaundice due to its diuretic effect.

INGREDIENTS
3 cups sliced fresh strawberries
3 cups cubed watermelon seedless or seeds removed
3/4 cup chopped fresh basil lightly packed
1 cup cubed fresh mozzarella or fresh mozzarella perals
2 Tbsp citrus olive oil or plain extra virgin olive oil
4 tsp Lemongrass Mint Balsamic vinegar or plain white balsamic vinegar
1/8 tsp fresh ground black pepper
Himalayan salt to taste
INSTRUCTIONS
In a large bowl, toss together the sliced strawberries, watermelon, basil, and mozzarella.
To make the vinaigrette, whisk together the olive oil, balsamic vinegar, and pepper.
For best results, drizzle the vinaigrette over the salad immediately before serving and not before. Sprinkle salt over salad to taste.
