Frozen Yogurt Bark
Here’s a fun and easy snack no one can turn down: Yogurt Bark! This play on chocolate bark uses frozen yogurt as the base. Mix Greek yogurt with a little honey and vanilla, then sprinkle with toppings of your choice: fruit, granola, chocolate chips, and nuts. Freeze it up and break it into pieces, and each bite is creamy and refreshing: perfect for kids and adults.
During the summer months we can get away with eating more cold and raw foods but moderation and caution should still be exercised especially if you are already experiencing digestive issues. A smoothie for breakfast with a sandwich for lunch, followed by a snack of raw nuts, and a salad for dinner would be a harmful combination for the spleen even in the hot summer months.
We can still eat fresh raw foods in the summer, even foods cold in temperature, but it is best to balance these with warming foods alongside. For example a salad combined with warm rice and a warm cooked protein. Or a cooked breakfast with a side of raw fruit.
It is also best to save the cold and raw foods we may crave for the hottest part of the day. Nothing beats a slice of watermelon or an icy cold beverage in the middle of a hot day.
INGREDIENTS
3 cups plain full-fat Greek yogurt
1/3 cup honey (or 1/2 cup for a sweeter bark)
1 teaspoon vanilla extract
4 strawberries, thinly sliced
3/4 cup granola
2 tablespoons pistachios, crushed
Other topping ideas: chocolate chips, peanut butter, crushed almonds or peanuts, sliced bananas, etc.
INSTRUCTIONS
Line a half sheet pan, 10 x 15″ with parchment paper or aluminum foil.
In a medium bowl, stir together the yogurt, honey and vanilla extract. Pour it onto the sheet and spread into an even layer.
Sprinkle the top with the thinly sliced strawberries, granola and crushed pistachios (or toppings of your choice).
Freeze for 3 hours. Break or cut into pieces and serve. Store the pieces in a sealed container in the freezer for up to 2 weeks.
NOTES
If you have a larger sheet pan, pour the yogurt to your desired thickness. Also, feel free to experiment with flavored yogurt as your base — remember to add less/omit honey if the yogurt is already sweetened!
