Golden Milk Kudzu Root Pudding

INGREDIENTS
2 1/2 tablespoons kudzu powder (Asian market or Amazon)
1 1/12 teaspoons ground turmeric
1 teaspoon fresh ginger juice (squeeze)
1/4 cup of maple syrup or honey
Pinch of ground black pepper
Pinch of salt
1/3 cup water
1 can unsweetened coconut milk (13.5 oz)
1/2 teaspoon rose water (optional)
Ground cinnamon (optional topping)
INSTRUCTIONS
In a saucepan, dissolve the kudzu powder by whisking it in water.
Add the turmeric, ginger juice, maple syrup/honey, black pepper, salt, coconut milk, and rose water. Keep whisking until dissolved.
Over medium-low heat, heat the mixture while whisking until the sides start bubbling over.
After in comes to a simmer, reduce to low heat, and whisk for 3-5 more minutes until the golden colored mixture changes from opaque to clear (from the kudzu cooking).
*Top with preferred toppings. You may serve warm or refrigerate and serve as a cold dessert!
