Tonifying Miso and Mushroom Soup

Tonifying Miso and Mushroom Soup

INGREDIENTS

  • 1-2 tablespoons olive, sesame, olive oil

  • 4 cups water or vegetable stock

  • 1 package firm/extra-firm silken tofu

  • 4 cloves garlic (finely chopped)

  • 1 red onion (chopped)

  • 10-15 shiitake mushrooms(thinly sliced)

  • 2 carrots (chopped or sliced)

  • 1 medium daikon radish (chopped or sliced)

  • 1 sweet potato (chopped)

  • 1 beet (chopped)

  • 1 small-medium leek (finely sliced)

  • 3-6 tablespoons red or brown miso paste (to taste)

  • Salt and pepper to taste

INSTRUCTIONS

  1. Cut all vegetables to preferred size.

  2. In a large pot, add the oil and sauté the garlic and onion on medium-high heat until slightly browned.

  3. Add the rest of the vegetables to the pot and sauté for another 5-8 minutes.

  4. Add the vegetable stock or water and bring to a boil. Then cover, lower to medium-high heat, add tofu, and let simmer for 25 minutes.

  5. Take a cup of the soup in a separate bowl to add the miso paste to and mix.

  6. Turn off the stove, allow the soup to cool for a few minutes, add the miso broth to the pot, and stir well.

  7. Serve warm and enjoy! Add garnishes and seasonings to your liking.
